Oven baked sweet potato fries and samurai sauce

SWEET POTATO FRIES

I N G R E D I E N T S (enough for two persons)
4 large sweet potatoes
1 tbsp coconut oil (or Extra virgin olive oil)
1/2 tsp Himalaya salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp paprika

A D D I T I O N A L / G A R N I S H
Chili powder
Cumin
Cayenne pepper

D I R E C T I O N S
Preheat oven to 200°C
Cut the sweet potatoes in fries.
Mix in a large bowl the sweet potato fries, herbs and coconut oil.
Toss everything together to coat.
Bake in the oven for 30 minutes.

VEGAN SAMURAI SAUCE

I N G R E D I E N T S
200 ml unsweetened soy milk
200 ml sunflower seed oil
Juice of one lemon
1 Spanish pepper (or more)
1 tsp Hymalaya salt
1/2 tsp black pepper

A D D I T I O N A L
1/2 tsp agave syrup or honey

D I R E C T I O N S
Combine all the ingredients in a blender cup. With an immersion blender (or blender or food processor), mix all the ingredients together until the mayonnaise emulsifies.
In case the mix comes out too thick, add a little bit of water.

N O T E S
When you leave out the spanish pepper you have a perfect veganaise or base for any kind of sauce.
