Scrambled tofu

Scrambled tofu for breakfast! Why not? The biggest advantage and disadvantage of tofu is that it is practically tasteless, yes. But that’s why you can add any flavour to it! I made tumeric scrambled tofu with avocado and it was yummy!

I N G R E D I E N T S (for two persons)
500 g tofu (drained)
2 spring onions
2 hands of spinach
1 avocado
2 tbsp coconut oil
1 tsp tumeric
1 tsp paprika
1/2 tsp Himalaya salt
1/2 tsp black peper

A D D I T I O N A L / G A R N I S H
Fresh herbs (chive, basil, parsley,..)
Seeds (pumpkin seeds, sesame seeds)

D I R E C T I O N S
Drain the tofu from the water
Heat in a pan the coconut oil and scramble the tofu
Add spices and spring onions
Add fresh spinach
Serve with avocado

N O T E S
If you like your tofu the Italian way for example, scramble your tofu with fresh basil, garlic and cherry tomatoes.
