Black bean croutons salad

I N G R E D I E N T S (enough for two portions)

SALAD
130 g black beans (drained)
50 g spinach
100 g romaine lettuce
50 g sunflower seeds
1/2 green apple

DRESSING
2-3 spings of mint
2-3 springs of flat leaf parsley
4 spring onions
Juice of 1 lemon
1 tsp Himalaya salt
1 tsp black pepper
30 ml rapeseed oil
2 tbsp filtered water

CROUTONS
2 slices of bread (I used Berber bread)
1 spring of rosemary
1 tbsp coconut oil
1 tsp Himalaya salt

D I R E C T I O N S
Create the salad: place prepared ingredients in a large bowl.
In a food processor add all of the ingredients of the dressing and blend until smooth.
Cut the bread into even sized cubes.
Melt coconut oil in a sauté pan, add the croutons and mix them up.
Add fresh rosemary and salt.
Remove pan from heat once the croutons are toasted.
