Chia pudding – coconut – mango puree

Fluffy chia pudding with sweet mango puree

I N G R E D I E N T S
Chia pudding (About 4 portions)
500 ml coconut milk
3 tbsp agave syrup
4 tbsp chia seeds
1/2 vanilla bean

Mango puree
1 mango
Juice of 1 lime
2 tbsp filtered water
2 passion fruit

A D D I T I O N A L / G A R N I S H
Mint

Mango puree
Mix the mango with the lime juice in the blender  until smooth
Cut the passionfruit in half and remove the pulp
Add to the mango puree

Chia pudding
Mix together the coconut milk, agave and vanilla in the blender until on high speed until it has thickened.
Add the chia seeds and whisk together with the coconut milk
Cover and let it set for 30 minutes
Stirr again and let it chill for at least 3 hours or overnight
Pour the chia pudding in a glass and layer with the mango puree
Garnish with fresh mint
