Quinoa Granola

I wanted to make a granola that’s suitable for everyone, including my best friend who can’t eat any gluten, dairy or fructose. So why not make granola with a quinoa base? Together with nuts and seeds you get a really crunchy granola with a sweet hit of cinnamon.

I N G R E D I E N T S
350 g quinoa (washed)
70g almonds (chopped)
70g cashews (chopped)
70g pumpkinseeds
70g sunflower seeds
30g sesame seeds
1 tsp cinnamon
3 tbsp coconut oil
5 tbsp agave syrup
1 vanilla bean
Pinch of salt

A D D I T I O N A L
Chia seeds

D I R E C T I O N S 

  1. Preheat oven to 180°C
  2. Cover an oven tray with parchment or use a silicone baking mat
  3. Combine all the dry ingredients in a large bowl
  4. In a saucepan, heat coconut oil with agave syrup and a vanilla bean
  5. Pour over the granola mixture and stir until everything is well coated and sticky
  6. Spread the mixture out and cover with parchment paper
  7. Put in the oven for 40 minutes and remove parchment paper after 10 minutes
  8. Fold every 10 minutes and press the granola before you put it back in the oven
  9. Once it’s ready let it cool down
  10. Enjoy!
