Kale salad with chickpeas, almond ‘feta’ & tahini dressing

I N G R E D I E N T S (4 portions)

INGREDIENTS SALAD
1 kale
300 g chickpeas
2 beetroots (cooked and cutted in dices)
1 kohlrabi (cutted in dices)
2 tangerines
Fresh chive

INGREDIENTS ALMOND FETA
250 g white almonds
80 ml lemon juice
80 ml water
4 tbsp olive oil
10 g salt

INGREDIENTS TAHINI DRESSING
200 g soya yoghurt
70 g tahini paste
20 g agave nectar
50 ml water
Juice of 1 lemon
Salt
Black pepper

ALMOND FETA
Soak 250 g white almonds in water for at least 2 hours
Drain and mix with lemon juice, water, olive oil, salt and pepper
Let it chill in the fridge

TAHINI DRESSING
Combine all the ingredients in the blender

BEETROOT
Preheat oven to 160°C
Cover your beetroots with aluminium foil
Place them in the oven for +/- 45 minutes, depending on the size of the beets
Once they are cooled down, you can easily peal the beets

SALAD
The chickpeas I prefer to soak and cook myself rather dan buying store bought chickpeas
Let the chickpeas soak in water for at least 8 hours, drain and cook then for 1,5 hours
Clean your kale, clean any bad parts off the leaves
Remove the hard stalk
Chop the kale in pieces

HOW TO PREPARE YOUR SALAD
Put the kale in a large bowl and add 2 tbsp olive oil and 1 tbsp white whine vinegar, season with salt and pepper.
Now massage the olive oil in your kale, this is very important in order to make the kale leaves soft
Add chickpeas, dices kohlrabi and some of the tahini dressing
Add slices of tangerine
Finish with adding your beetroot (otherwise your whole salad is pink)
Season with salt and pepper
Add your almond feta cheese, using a knife to make scoops of the almond feta, be generous!
Finish with extra olive oil and freshly cut chive.
