Smørrebrød w almond horseradish spread and raw marinated brussels sprouts

I N G R E D I E N T S For two persons
ALMOND CREAM
125 g white almonds (soaked)
5 g grated horseradish
5 g salt
2 tbsp olive oil
Juice of 1 lemon
80 ml filtered water
1/2 1 stalk celery
1/2 apple

MARINATED BRUSSELS SPROUTS
100 g brussels sprouts
5 tbsp olive oil
1 tbsp chardonnay vinegar
Salt
Pepper

D I R E C T I O N S
ALMOND CREAM
Soak the almonds in water for at least 30 minutes
Drain and mix with lemon juice, grated horseradish  water, olive oil, salt and pepper
Cut 1/2 apple and 1/2 stalk celery in brunoise
Mix it all together

BRUSSELS SPROUTS
Wash the sprouts
Cut the sprouts into thin slices
To make it yourself easy put the sprouts in a jar, add the olive oil, vinegar, salt and pepper and shake it well. Make sure alle the slices are covered with olive oil
Let it rest for 10 minutes

Serve on smørrebrød with a side salad of spinach, radish, cress and sunflower seeds
