Chilled green soup


I N G R E D I E N T S (for two portions)
1/2 cucumber (skin on)
1/2 avocado
1/2 apple
1/4 red onion
1 clove garlic
Bunch of fresh cilantro
8-10 leaves fresh mint
3 tbsp olive oil
2 tbsp white wine vinegar
200 ml unsweetened almond milk
300 ml cold water
Juice of 1 lime

N O T E S 
In case you’re not a big fan of cilantro or mint you can replace these herbs by dill or basil. Will work perfectly as well!

G A R N I S H 
Olive oil
Fresh herbs: cilantro, mint
Lime zest
Slices avocado, apple of cucumber
Spring onion

D I R E C T I O N S 
BLEND all the ingredients!
Serve chilled
Garnish with extra herbs or slices cucumber, avocado or apple
