Chia pudding – pink grapefruit – raw pistachio – mint

So refreshing, so good

I N G R E D I E N T S
500 ml coconut milk
3 tbsp agave syrup
5 tbsp chia seeds
1/2 vanilla bean
1 pink grapefruit
4 tbsp grounded pistachio (raw)
Bunch fresh mint

D I R E C T I O N S
Mix together the coconut milk, agave, vanilla in the blender until on high speed until it has thickened.
Add the chia seeds and whisk together with the coconut milk
Cover and let it set for 30 minutes
Stirr again and let it chill for at least 3 hours or overnight
Cut the grapefruit in segments
Chop some mint leaves
Garnish with grapefruit segments, grounded raw pistachio nuts and mint
Enjoy!
